ALL: canning

Canned peaches

Peaches! There’s a reason we associate peaches with daylight, sticky air, and bare feet. They’re the color, texture, and taste of the summertime. To experience June through August in Nashville is to eat, can, and preserve peaches. Eat them straight out of the jar or atop a delicious summer recipe.

Canned Tomatoes

Our sense of smell, or olfactory system, is most closely linked to memory association. The smell of canned tomatoes will forever place me in my Grandma Trudy’s kitchen. My favorite meal in the entire world, her chili, was made from freshly-canned tomatoes grown in the Ohio countryside.

Canned Pear Sauce

Canned Pear Sauce is a simple way to diversify your pantry. Similar to Canned Applesauce, Canned Pear Sauce is an excellent approach to saving in-season pears efficiently and flavorfully.

tangy dill pickles

Cucumbers grow in abundance year after year. They are hearty, reliable, and can be used to create refreshing drinks, summer salads, and pickles! Snack on our Tangy Dill Pickles alone, or add them as a side or chopped topping to your favorite sandwich.

Simple Pickled Onions

We add pickled onions to any dish that welcomes them! They complement toasts, tacos, sandwiches, soups, and more with their pop of flavor, crunchiness, and color. That pink! Pickled onions are an approachable, quick-to-create staple and can be used year-round on a variety of meals.

Pickled cauliflower

Pickled Cauliflower is a recipe Jared has requested for months and months, and I am over the moon to share it with you. Cauliflower is incredibly enjoyable in its pickled form. It tastes refreshing and presents beautifully.

Pickled Vegetable Medley

Pickled Vegetable Medley is inspired by an unforgettable meal I had at Lou in Nashville, Tennessee. My meal included simple ingredients prepared perfectly: marinated lima beans, crisp lettuces, and pickled vegetables.

All: Preserving

Blueberry mint jam

If I could turn this jam into a candle, I would in a heartbeat. Its aroma is as rich as its flavor. Balanced parts blueberry and mint, its smell and taste epitomize the sweetness of summer. I envision a warm spoonful atop vanilla cheesecake paired with fresh blueberries, a mint leaf, and a glass of iced coffee.

Blackberry Lavender Jam

I imagine every hue of purple and red meeting and mixing when I think of this recipe. While the mint of our Blueberry Mint Jam adds a flair and punch, the lavender of our Blackberry Lavender Jam adds a softness to its essence. Allow the lavender’s scent and taste remind you to breathe deeply, sit comfortably, and eat slowly.

Peach Bourbon Jam

Peach Bourbon Jam is a favorite seasonal cocktail in the form of preserves. The sweetness of peaches and caramel notes of bourbon create a balanced and rich experience that is meant for summertime.

Green Pepper Jam

Green Pepper Jam is a sweet-and-spicy addition to a full charcuterie board or a warm bagel with cream cheese. It very well complements the rich flavors of cheeses and salty flavors of crackers.

MANDARIN MEZCAL MARMALADE

Mandarin Mezcal Marmalade immediately transports me to Oaxaca, Mexico. In July 2022, I traveled to Oaxaca to study at Pocoapoco, an arts and cultural organization for artists, educators, and the curiousity-driven person.

Strawberry Rose Jam

The readiness of strawberries signals the readiness of summer. The moment fresh strawberries are available at farmers’ markets is the moment I know green, warm, and sunny days lie ahead.

SWEET PEPPER JAM

This year, on the eve of Easter, Jared made deviled eggs with Sweet Pepper Jam, Simple Pickled Onions, and candied bacon. It was the perfect combination of savory and sweet in one bite.

Berry Medley Jam

Memorial Day Weekend is here. I often enjoy bowls of mixed berries throughout this honorable weekend, including blackberries, blueberries, and strawberries. The use of each type of berry when making jam allows for a dynamic, flavorful, and layered experience.

Fig Cinnamon Jam

My first-ever Fig Jam recipe was created when Jared’s aunt, Aunt Beth, wrote me on a warm Sunday morning in early autumn to tell me her fig tree was in bloom. I immediately drove to her house and picked fresh figs.

Citrus season! We welcome it with open palms in our household. Oranges! Tangerines! Kumquats! Satsumas! They allow the longest days of winter to feel warmer, delicious, and more alive.

Limoncello Marmalade

I daydream of Italy anytime I see, hear, or read the word ‘limoncello’. It transports me to Positano, the storybook Italian village built into a cliffside. While common, isn’t it quite profound when a single word takes you to another time and place?

All: Freezing

wiley_recipes_frozen_sweet_corn_excerpt.jpg

Frozen Sweet Corn

If I could savor one, and only one, flavor year-round, it would be the flavor of sweet corn. How can a vegetable taste so nourishing and so indulgent at once? Sweet corn freezes beautifully and can later be enjoyed in soups, salads, or as a side dish.

Frozen Blueberries

There is a rhyme and reason to freezing summer berries properly. Blueberries arrive aplenty at the farmers’ markets each June, and I buy several pints to dedicate solely to freezing. Frozen blueberries can be used for smoothies, jams, pies(!), ice cream toppers, and more!
